I was standing in line at the market waiting to be helped by the butcher, who had a couple people out sick so he was bravely holding down the fort until help arrived. I took my number and stood patiently.
“Do you like to cook?” the woman behind me asked.
“Huh, me?” I said rather intelligently.
She nodded and repeated the question.
“Yes?” I answered the question, slightly afraid of why she was asking or if she had just read my mind.
She pointed to the detailed shopping list I clutched in my anxious hands.
“No one makes a shopping list like that if they don’t love to cook,” she said chuckling. “Making anything special?”
We chatted about food for the next ten minutes and then a few minutes after we had both been helped.
The we ended up in the same long check out line.
That’s when she took one look at the bag of Doritos nacho cheese chips in my cart and gave me a golden gift from above… there in line, she spewed forth the recipe for The Ultimate Chicken Nachos.
I wrote it down. So did the checker and the person in front of me. The lady behind her abandoned the line saying that she was going to get the ingredients right then.
Lady in the store, you are my freakin’ hero!
Two years later… I’ve never seen that lady again but the ultimate chicken nachos are amazing!
This is a versatile recipe that allows you to use up some of those leftovers too.
Who knew fabulous was hiding in a frugal package!?
To make The Ultimate Chicken Nachos you will need:
1-2 whole cooked chickens- remove meat from bone and shred
(I make this when I have 3+ large leftover cooked chicken breasts or equivalent of seasoned leftover chicken or a pound of cooked ground beef/turkey. Leftover taco or burrito meats are fabulous too.)
1- 8 ounce Jar of your favorite CHUNKY salsa
(CHUNKY… we do mild but you can certainly kick the heat up if you’d like but make it a chunky salsa)
1 Cup of Chicken Broth
1 Small Green Pepper- chopped
1 Medium Onion- Chopped
1 Can of Cream of Chicken Soup
1 Can Cream of Mushroom Soup
1 Clove of Garlic- chopped
1 Family Size or Party Size Bag of Doritos Nacho Cheese Flavored Chips
4 Cups of SHARP Cheddar Cheese
(Yes, sharp matters. You want the cheese to retain its own flavor amongst everything going on in this dish.)
In a saucepan over medium heat add:
the pepper, onions and garlic
Stir veggies together for three or four minutes and then add to the pan:
The Cream Of Mushroom and Chicken soups, salsa, and chicken broth.
Let that cook together a few minutes on medium low.
In a large casserole pan add:
Half the bag of Doritos Chips and spread them out covering the bottom of the pan.
Then spread half of the chicken over the chips.
Now we are going to spoon half that sauce we had simmering on the stove, over the chicken and chips.
Grab the Sharp Cheese and spread half of it on top.
second layer of chips, chicken, sauce, cheese.
Bake in the oven at 350 degrees for 40 minutes.
The ultimate chicken nachos are a great appetizer, game day food, snack and way to toss together something super tasty at the last minute that everyone raves about. It doesn’t break the budget and most of the supplies are already hanging out in the pantry.
Great for family game night or a great later snack after an early meal!
The Handsome Prince proclaimed them to taste like the old school nachos did, once upon a time from Taco Bell. 😀
I believe that means they must be the ultimate chicken nachos if all (but the vegetarian here) request them time after time.
