I think almost everyone I know has their own version of Taco Soup.
That is NOT a bad thing.
Taco Soup is easily customizable and REALLY hard to mess up.
My Taco Soup Recipe is our favorite.
I make it in my Crock Pot, serve for a meal and then freeze in the portion sized containers that work for me.
Dinner is covered AND I have several home cooked meals frozen for later!

So all you do is toss everything into the Crock Pot, let cook on HIGH for 3 Hours or LOW for 6 Hours.
Ready?
Schlep out that Crock Pot!
This Crock Pot is your friend. It will save you time, money and doesn’t take up room in or on the stove.
Pour into Crock Pot:
1 Pound Ground Beef- You may also use Ground Turkey, Ground Chicken, Cubed leftover chicken or shredded up leftover rotisserie chicken tastes amazing too!
1 3/4 Cups Kidney Beans or 1 can
1 3/4 Cups Black Beans or 1 can
3 1/2 Cups Tomatoes-crushed or 28 ounce can
1 Medium Sized Onion- Chopped
1 3/4 Cups Corn or 1 can
2 Cups Tomato Juice
1 Package Taco Seasoning- We are not spicy people so I tend to use a MILD or Original. If you are Spicy people, crank it up a notch and use a HOT mix!
1 Package Ranch Dressing Mix
2 Cans Cream of Potato Soup
1 1/2 Cups of Beef Broth (if you are using Chicken as the meat in this recipe, you may wish to use chicken broth instead of beef broth)
OPTIONAL FOR A SPICY KICK ADD: 1/2 Cup Diced Green Chilies or 1- 4 ounce can
Pop that Crock Pot lid on!
Cook on High for 3 Hours OR LOW for 6 Hours.
Now think about the people you’ll be serving this to…
Then bust out the awesome toppings to garnish this Taco Soup!

Sour Cream
Shredded Cheese
Avocado
Black Olives
Diced Tomatoes
Frito’s Scoops
Tortilla Chips
When the first meal is done. Wait for the soup to cool and then place it in a freezer bag or portioned bowls.
I like to use these bowls when I know I’m freezing something that my kids will happily be reaching for in the freezer to heat up. It makes it easier for them to serve themselves if necessary and they stack well in the freezer.
The advantage to freezing flat in a freezer bag is that it does not take up as much room.
The choice is up to you my friends.
Do what works best for you and your family’s needs.
I like to use a little bit of this Taco Soup to Pour over lettuce, sprinkle with cheese for a funky spin on a yummy Taco Soup Salad. 🙂
Just make sure to label and date things CLEARLY before freezing!
Freezing leftovers into another meal saves time and money BUT if you do not take the time to label and date these wonderful homemade frozen dinners, all this work will go to waste!
You’ll forget what it is or when you made it and before you know it you’ll be tossing something.
You can’t save cash when you are wasting it Silly!
