Fudge cakes are so delicious on their own that we don’t bother to frost them.
Thus becoming a favorite of the packed lunch crowd.
Super easy and oh so delicious!
Pre-heat those ovens to 325 degrees.
In a large bowl add:
1 3/4 Cups Sugar
1 Cup Flour
Gently blend together.
In a saucepan over low heat add:
5 Squares of Semi-Sweet Chocolate
1 Cup Butter
Melt together, stirring frequently.
*If you like nuts in your cupcakes (We do not) add 1 1/2 Cups Chopped Nuts of your choice into the chocolate butter mixture as well.*
When the butter and chocolate are nicely melted together, remove from heat and allow it to cool a little bit.
Combine the flour mixture and the melted chocolate.
Add: 1 Teaspoon of Vanilla
Blend it all together!
Pour into lined muffin tins no more than 3/4 full.
Fudge Cakes are wonderful on their own and make a great snack that isn’t messy.
Every so often I’ll squeeze a little frosting into the center to give lunch a little surprise. Make a batch of your favorite flavored homemade whipped cream to completely change up the flavor after dinner. It is a chocolatey awesome snack cake made in your own kitchen… and it is fun to share them.
Our kids report that fudge cakes are the second most requested treat in their lunches.
The first was fruit leather.
Whatever, fruit leather… the most requested that I MAKE is fudge cakes but the homemade Uncrustables sandwiches with Nutella and peanut butter might over take fudge cakes in 2014 according to what Kenzie reported to me.
