Brown Sugar Muffins

Brown Sugar Muffins- 8 ingredients found in you’re kitchen already!

 

I woke one morning and remembered that I had not made it to the market recently and my cupboard was looking like Mother Hubbard.

My people were little and fairly easy to please.

A friend had served these Brown Sugar Muffins at a brunch and I got the recipe.

Now was the time I needed to put these Brown Sugar Muffins into action!

 

They were a hit and have become a regular part of our breakfasts for the better part of 10 years.

Made form nothing but basic staples most keep in their homes already.

 

I passed this recipe along to my vegan friend and she says it’s wonderful with Coconut Milk in place of the “normal” milk. She also substitutes bananas for the egg.

 

It can be the last minute answer to a quick breakfast, snack or an easy addition to a lunch bag for a little something sweet.

 

In the time it takes to pre-heat the oven to 375 degrees, you can have these Brown Sugar Muffins ready to go in!

 

In a mixer or bowl add:

 

2 Cups Unbleached Flour

 

1 Cup Milk

 

1 Teaspoon Vanilla

 

¼ Salt

 

1 Egg

 

1 Teaspoon Baking Soda

 

1 Cup Brown Sugar

 

½ Cup Oil

 

Optional: ¼ Cup Chopped Walnuts

 

Mix until well blended.

 

I like to use cupcake wrappers because my lazy hates dishes.

I found these cute holiday wrappers at the .99 Cents Only Store.

 

Fill each muffin cup about half way full.

 

No laughing at my cheap-o muffin tins!

I had several projects cooking that day and my Brown Sugar Muffins drew the short straw and got the alternate set of back up wear.

We’re just something over here…

I‘m not sure what,

But something strange.

 

I sprinkled a little dusting of sugar over the top of each muffin just to complete each one.

 

Pop them into the oven at 375 degrees for 15 minutes.

 

They should be beautifully browned when done.

 

I really like these with strawberry or blackberry jam.

Most of the kids like them just plain.

Luc thinks Brown Sugar Muffins are awesome dipped in yogurt like frosting.

The Handsome Prince in not a fan of Brown Sugar Muffins BUT the rest of us + many friends agrees that he might be the nutty one on this one.

 

He’s a cake guy. Muffins just are not his thing unless frosted or from Costco any who.

 

These Brown Sugar Muffins are so budget friendly and so quick.

They’ll be you’re go to, fall back, OMG I need to throw something together so I can make it to the market breakfast of choice.

Soon they will be a regular on you’re table too!
