Baked Oatmeal

“You have to eat oatmeal or you’ll dry up. Anybody knows that.”

-Kay Thompson

Baked Oatmeal…or as I like to think of it, what to do with leftover oatmeal packets.

This recipe came to life when I realised my people had been eating all BUT the apple cinnamon packets of oatmeal.

My pantry had accumulated a good 15 packets that I needed to find a good use for.

Baked Oatmeal was the ticket!

It’s not that they didn’t like the flavor, as long as I was supplying their favorites why chose a second choice?

Baked Oatmeal turns out like a sweet chewy granola bar.

I’ve made Baked Oatmeal out of almost every flavor…

apple cinnamon, peach, blueberry, brown sugar, strawberry AND

You can even use plain oatmeal too!

Pre-heat the oven to 350 degrees

In a bowl add:

1/2 Cup Vegetable Oil

2 Eggs

1 Cup Sugar

Mix those 3 together well and then add:

3 Cups of Oatmeal

 1 Cup Milk

 1 Teaspoon Salt

 2 Teaspoons Baking Powder

Mix well.

Take an 8×6 baking pan and grease it well.

I like to use butter to grease my pan for this dish.

Butter just seems like the right thing to do with oatmeal.

Before being baked

Pour the Baked Oatmeal into the buttered pan.

Pop that beautiful Baked Oatmeal into the oven at 350 degrees for…

45 minutes.

It will be moist and golden brown.

You know you like the Bat-chula! :)

Cut and serve like you would cookie bars or brownies.

I LOVE this hot out of the oven with a small scoop of vanilla bean ice cream!

Some of my kids like it plain.

Others like it hot with a little butter or jam.

I like them cold and plain too… so it HAS to be good. :)

YUM!

Excellent for large family breakfasts, school lunches and anytime!

Wanna know the best part?

Shhhh, it’s made from stuff I bet you have in your pantry and fridge already!

I already had everything on hand so it didn’t cost me anything but time today.

If you need to pick up ingredients on the cheap… there is not one ingredient listed here that can not be purchased for under $1 at .99 Cents Only Stores or Dollar Tree.

You can now use coupons at DOLLAR TREE!!!

Hear that?

You can make this from scratch paying half again the cheap cost of Dollar Tree!!

I just stocked up on a bunch of totally FREE items from Dollar Tree using my coupons. :)

I even find MANY organic brands there too!!

If you find yourself with leftover packets of oatmeal or need to pull of an excellent dessert, breakfast or side remember Baked Oatmeal.

Save your budget, time and eat well all in one shot!

Look at you savvy saver, baking like a boss again. ;)

Baked Oatmeal brings my neighbors over and mail to my front door because everyone wants to know what that AMAZING smell is!

One taste and they’re hooked.

Bonus: Baked Oatmeal, tastes great is good for you AND is an excellent air freshener!

I can keep my hands out of the pan until they’re all gone.

I don’t even like sweets!?
