I can’t say that we’re big pork eating people.

However, I can’t resist a great deal on quality meats so I had to learn how to make it taste outstanding while still coming in UNDER budget.

I often find great deals on pork roasts, chops, ribs and tenderloins.

They freeze well too, when portioned into air tight baggies and labeled/dated.

During the summer months, the heat makes me NOT feel like cranking up my oven.

**That’s where your Crock Pot comes in!

Your Crock Pot will save you time, money and provide you with a slow cooked homemade flavor that can not be beat!

Plus, it doesn’t heat up your kitchen like other appliances or occupy your oven when your trying to prepare many items at one time for a party or holiday.

5 Simply Fabulous Crock Pot Recipes- Pork Edition

** HOLIDAY PORK ROAST**

(aka Cranberry Sauce a la Oink)

The sweetness of the cranberry makes this a phenomenal dish!

Turn your Crock Pot on LOW and place the ingredients into it…

3.5 pound Pork Roast (or close in size)

2 teaspoons Zested Orange Peel

1 cup Fresh Chopped Cranberries ( or 1 can for us lazy folks)

1/3 cup Honey

1/2 teaspoon Minced Garlic

1/4 teaspoon Ground Nutmeg 

1/4  teaspoon Ground Cloves

Sprinkle Salt & Pepper over all to taste.

Let cook for 8-10 hours. Slice thinly and serve next to a favorite vegetable and salad.

We LOVE our Potatoes and Onions with this!

**HAWAIIAN PORK LOIN**

Turn Crock Pot on to LOW and place all ingredients into it.

3 pound Pork Loin (I prefer BONELESS)

1 teaspoon Nutmeg

1/2 teaspoon Paprika

1/2 cup Ketchup

1 can Pineapple with 1/2 the juice

1/2 cup Orange Juice

4 tablespoons Honey

2 tablespoons Soy Sauce

4 tablespoons fresh Lemon Juice

Let cook for 6 hours. Shred the pork and place it back into your Crock Pot.

Pour all juices from your Crock Pot into a sauce pan. Over medium heat add:

1 1/2 tablespoon of Cornstarch

1/4 Water

Mix and cook until thickened. Pour over meat.

Serve over rice with some fresh fruits and veggies.

We love the Super Easy Veggies with this too!

**SUPER SHREDDED TACOS**

Set Crock Pot to LOW.

Inside your Crock Pot place:

 2 1/2 pounds of Pork Lion (per 6 People)

3 large jars of your favorite Salsa OR about 48 oz. of your Homemade Salsa

Cook on low for 6 hours.

Shred pork and serve.

To shred pork you simply use your fork! It will be tender and will fall apart very easily.

We like to make soft tacos with corn tortillas but I like to make sure to have some flour tortillas on hand when we have guests or for leftovers. This shredded pork makes an excellent burrito or served alone!

Make sure to have lettuce, cheese, tomato, cilantro, onions, avocado and sour cream to make your amazing tacos!

** BBQ SPARE RIBS**

Turn on your oven broiler on HIGH and your Crock Pot on LOW

Grease the inside of your Crock Pot to prevent sticking.

Cut 4 1/2 pounds of Spareribs into 2 rib piece chunks and place them on a parchment paper or foil lined cookie sheet. Place the cookie sheet with the ribs under the broiler for 8 minutes for each side.

Place your ribs into your Crock Pot.

In a bowl mix together:

1 cup Brown Sugar

1 cup Ketchup

1/4 Vinegar

2 Tablespoons Worcestershire Sauce

Salt and Pepper to taste

When well mixed, pour over the ribs in the Crock Pot.

Allow to cook on LOW for 6 hours.

We serve these as an appetizer or as a main course!

**SWEET AND SOUR RIBS**

Turn your Crock pot on to LOW.

Grease your Crock Pot to prevent sticking.

Cut 4 1/2 pounds of Spareribs into 2 rib piece chunks and place them on a parchment paper or foil lined cookie sheet. Place the cookie sheet with the ribs under the broiler for 8 minutes for each side.

Place your ribs into your Crock Pot.

In a bowl combine:

1 tablespoon Soy Sauce

1 cup Chicken Broth

1/4 cup Brown Sugar

1/4 Orange Marmalade

1 clove of Garlic Crushed

2 tablespoons Ketchup

1/4 cup Vinegar

Mix well and then add:

1 small Onion sliced into thin rings

1 green pepper cut into chunks

Pour your mixture over ribs and mix them so they are well coated.

Cook for 6 hours.

We serve them with rice and mandarin oranges.

Setting your Crock Pot to cook in your garage or sun porch is just another way to keep it as cool in the house when temperatures are rising outside.

I love the feeling of accomplishment I get when the family all arrives home, starving, needing to do homework and the smell of dinner greets us at the front door like an old friend.

I can get dinner on the table before everyone has time to set their stuff down and wash up.

A hearty home cooked meal that cooked while I was out saving the world working.
