3 Homemade Frozen Dinners With Leftover Chicken

 3 Homemade Frozen Dinners With Leftover Chicken is yet ANOTHER way we make our dollar stretch while NEVER skimping on taste or health!

Raise your hand if you have ever had to escort something nearly unidentifiable from the back of the fridge.

You! Right there!

You in the purple, I didn’t see you’re hand up!

Face it!

We have ALL done our fair share of being wasteful.

We could all stand to save money but none of us really want to work any harder to do it.

This is where my 3 Homemade Frozen Dinners with leftover chicken comes in!

Life gets busy and we’re tempted to dial for Domino’s, roll through an grab something from the car on the way to the next meeting/practice/ pick up/ drop off… that gets EXPENSIVE and it’s such an unhealthy example to set.

I grabbed a great deal on chicken so I could certainly make these recipes using fresh chicken. However, the beauty of these recipes is using that little bit of leftover chicken to create a whole new meal that can be frozen for later!

Welcome to making you own healthy frozen meals for your family on a dime!

Typically I cook my chicken for all my recipes.

You may use a pre-cooked chickens from the deli, leftover any type of chicken that has been taken off of the bone.

Make one dish to feed my family that evening, another one for my freezer as well as the other 2 recipes! I get dinner for tonight and 3 frozen dinners that will take less than 20 minutes to heat later on!

 

Chicken Enchiladas

**********************************

Saute 1/2 Cup Onion

2 Tablespoons Butter

1 1/2 Teaspoons minced Garlic

in a pan until they are nicely browned.

Add: 1/4 Chopped Olives

1 Can of Cream Of Mushroom Soup

1 (4.5 oz.) Can Green Chilies

1/2 Cup Sour Cream

Mix this all together and split in half into 2 separate bowls.

In one bowl add: 1 1/2 Cup Shredded Chicken

1/2 Cup Cheese

In the other bowl mix in: 1/2 Cup Sour Cream

1/4 Cup Milk

 

Spread about 1/2 a Cup of the mixture in the second bowl with the extra Sour Cream, along the bottom of an 8×8 pan.

In each Tortilla place 1/4 of a Cup spoonful of the chicken cheese mixture and roll up the tortilla. Place it seam side down in the pan with the yummy sauce already in it.

Repeat until all of the chicken cheese mixture is safely rolled into each tortilla and arranged in your pan.

When the chicken is all rolled up…

Pour the remainder of the sauce from the second bowl evenly over the tortillas.

Cover tightly LABEL and FREEZE.

DON’T skip the label step- No One want to play what the heck is this for dinner??!?!

It’s just not nice!

When you are ready to serve this:

Bake at 350 Degrees for 25 minutes.

Just before it’s done, I like to sprinkle it with about a 1 more cup of shredded cheese for good measure.

Melted cheese is AWESOME!

ALL THAT from just one and a half cups of extra chicken! YUM!

 

 

Chicken Fettuccine Bake

*****************************************

Chop up 1/2 Cup of cooked chicken and put in a saute pan

Add: 1 (14 oz.) can of Diced Tomatoes w/ their liquid

1/2 Cup Onions diced

1 Teaspoon of Oregano

Bring to a boil and then reduce to simmer at low for the next few minutes while we prepare the rest.

Just before you are going to use this sauce you will add to it:

1/2 Cup Mozzarella Cheese

Cook the fettuccine according to package

When the noodles are done, drain and return to your pot.

Meanwhile in a bowl mix together:

1/4 Cup Parmesan Cheese

2 Tablespoons Butter

2 Tablespoons Parsley

1/2 Teaspoon Garlic Minced

3 Eggs

Coat 2 metal pie pans with your egg mixture.

Toss your noodles in the rest of the egg mixture.

Place 1/2 of your noodles into each pie pan.

Pour 1/2 the Chicken Tomato mixture you have been sauteing over each pie pan of noodles.

Cover Tightly, LABEL and FREEZE.

When you are ready to serve it.

Bake it at 350 for 25 minutes until it’s hot and bubbly!

That’s ANOTHER meal made with the average size of ONE large chicken Breast!

Wild Rice Chicken

************************************

Get 1 package of your favorite Long Grain & Wild Rice (6 ounces or so)

Cook the rice according to the package instructions.

When the rice is done and cooled to the touch, place it in a Gallon sized Freezer Ziploc Bag.

Into your bag, add:

1 Cup + of Shredded Chicken

1 (8ounce) can Water Chestnuts, Drained

1 Cup of Celery, Chopped

1 1/2 Cups Onion, chopped

Mix together in the LABELED BAG and pop it in the freezer.

Did I mention that you had better have labeled that bag or I’m reporting you to your family before any unfortunate dinners occur.

Just looking out for everyone’s welfare! ;)

When you are ready to serve the Wild Rice Chicken-

break it up while it’s in it’s bag and then dump the contents of the bag into a casserole dish.

Mix into the dish with the rice:

I can of Cream of Mushroom Soup

1 Cup of Mayonnaise

Bake in the oven at 325 Degrees for 1 hour.

It’s THAT easy!

3 Homemade Frozen Dinners With Leftover Chicken costs you very little to have it feed so many!

3 extra leftover Cups of Chicken can feed your family a wonderful home cooked meal on the fly in no time, with VERY little effort.

Each can be paired with a seasonal fresh fruit or veggie to complete the meal but each are  delicious alone.

Another way to streach your dollar without any big scarifice.

As we pair down our portion sizes, I’m noticing an increase in leftovers. Those chunks of chicken are made into incredible salads, soups, ethic dishes and local favorites.

I can feed a family of 6 a very little money per week because I know how to purchase while the sales are excellent, cook many wonderful meals and have a freezer full of home cooked family favorites in no time with hardly any cash spent.

Most of our budget is fresh items because I’ve learned to coupon and watch sales to provide healthy meals for less than the cost of a Big Mac and Fries!

    Wow….you make cooking and prepping for the busy life so easy. I really need to try these when I get feeling better.
